Can anyone tell me if it damages the flexible hoses if they are clamped (squashed) to stop the brake fluid draining out?

It's a common (and quick) practice in the auto industry but I wouldn't do it, a small nip up will probably cause no damage but it's too easy to go too far and crush the rubber.
Brake hoses are just too important to save a few seconds. Better to fill the reservoir and plug/cap the hose to minimise fluid loss.
